Why is it good to use different charges for different account types?

Because depending on the account type, it changes what they have access to and what risk there is for you versus Stripe

If you use Express accounts, they have no Dashboard access. They have no way to view Disputes and respond to them for example

One more use case

Imagine a marketplace like TaskRabbit if you are familiar. Basically there are common people who have no idea about Stripe or how to manage any of that. Is the Stripe Connect and Stripe Express user friendly enough for them?

I would say yes, Express is best here. And TaskRabbit would manage disputes here because customers pay TaskRabbit, the business, not the individual person coming to perform the task, if that makes sense
