As far as I know, it really depends on the card issuers. If the cvc isn't provided then the card issuer can't perform a verification check which might end up flagging the transaction as fraudulent.

talking with our contact at Visa he said:
There is no need for the CVV in a MIT, but there are rules for transaction data field information that the gateway provider has to follow to comply with the MIT framework to avoid decline from the card issuer side.
is there a way I can add this transaction data field information?
hmm not sure. I would recommend talking to our support team about this. They should know (our team on discord don't know a ton about the framework and requirements).
