I don't believe there is a document specific to this flow. You can adjust the default payment method options that are included on newly created Invoices in the dashboard:
https://dashboard.stripe.com/settings/billing/invoice

Once ACH Credit Transfer has been enabled you can create a new Invoice.
https://stripe.com/docs/invoicing/integration
