My understanding is that you can only edit the price if it hasn't been used already. Otherwise you'd need to create a new price and archive the existing one.

Weird. I thought this would have to do for subscriptions only but not products tha have one time payment

I think it locks the price as soon as it is used regardless of one-time OR recurring
