Yes, but the hold option that stripe offers only allows to hold funds for 7 days
can you share a little more on what your business is about?
We are doing car rentals, so our scenario for the deposit is if a customer rents a car for more than 7 days we need to hold a deposit till the car is returned

Let them know that you're looking for extended authorization. It may be possible to offer a longer period of authorization, but it's not something which my team can help you with here
