Yes, but the hold option that stripe offers only allows to hold funds for 7 days

We are doing car rentals, so our scenario for the deposit is if a customer rents a car for more than 7 days we need to hold a deposit till the car is returned

hmm, can you reach out to Stripe Support https://support.stripe.com/contact and make sure to include what you just mentioned here about what your business is about? Let them know that you're looking for extended authorization. It may be possible to offer a longer period of authorization, but it's not something which my team can help you with here
