I'm not sure really if there's any difference. Did you try testing them?

I did and they seem to have the same behavior
If I set the promotion_code to an empty string the discount is removed and if I change it, the discount is changed. The behavior is the same if I use the coupon field and if I use the stripe.subscriptions.deleteDiscount to remove the discount
On the surface they seem to do the same job but I was wondering if there are any differences between them
