I also tested this on my end and I do not think you can change this behavior. This, https://stripe.com/docs/api/checkout/sessions/create#create_checkout_session-customer_update-name is used if Checkout saves the name onto customer.name.

They'd need to unclick "Billing address is same as shipping" to see different names here.
