From further looking, it appears that the currency supported in CA is CAD: https://stripe.com/docs/payments/wechat-pay/accept-a-payment?platform=web#supported-currencies. Can you try creating the Checkout Session with CAD currency?
@heady sage - let me know if you still do not see wechat pay after changing the currency.
