You should always checkout against the v1 signature. Ignore v0

All it says it that we send a v0 signature to aid with testing

To be clear, each signature corresponds directly with the signing secret for the webhook

#

So you may roll a new signing secret and have 2 signatures in your live event headers

#

Until the old secret expires
