Not possible to have the funds stay as pending, you would need to move that account to manual payouts until you are ready for payouts to occur.

That won't hold the funds in pending indefinitely

Depends a little on the API version you are on. There should either be a charges hash on your PaymentIntent object, or if you are on the newest API version then you should use latest_charge: https://stripe.com/docs/api/payment_intents/object#payment_intent_object-latest_charge
