Yes I confirm that this Checkout Session, that was created with a Payment Link, doesn't have a customer associated with it.

If you want to always create a customer, you can with this option: https://stripe.com/docs/api/payment_links/payment_links/create#create_payment_link-customer_creation

ok but is it mandatory for a checkout recurring payments have a customer?

The Checkout Session you shared is not for a recurring price, so a customer is not required. If you have a Checkout Session for a recurring price, then I believe a customer will always be created yes.
