Another semi related question, can one have different invoice templates (so when merchant 1 is X we use invoice template A and when merchant 1 is Y we use invoice template B)?

What types of charges are you doing? Direct Charges, Destination Charges, or Separate Charges & Transfers? https://stripe.com/docs/connect/charges

Right now we're using destination charges, but the question is for the case in the question, if we were to use separate charges and transfers, would we be able to have different invoicing templates?
