This is the VAT for you, the seller, not the business customer?
You can set up to 4 custom fields on an invoice to be displayed in the header: https://stripe.com/docs/invoicing/customize#custom-fields
AH, and not under Tax settings, but in your Invoice Template at the very bottom you can also configure some static tax id(s) to be included on all invoices by default:

That probably what you want -- set it once, unless you need to show different IDs per customer/invoice
