Yeah, Aware of it. But wondering if there is an option we can show all the products on checkout page and let user decide which they want to select

No that's not possible. The closest thing would be to use adjustable quantity: https://stripe.com/docs/payments/checkout/adjustable-quantity

So technically your cusotmer could adjust quantity to 0 for line items they don't want
