Unfortunately I don't think we have finer grained controls for this at the moment. Being connected to their account you'll have access to all of the data that the API can retrieve.

If it is feasible, it might make sense for them to make a separate account for their transactions that aren't with you

Is there some sort of multi-account rollup system in stripe for reporting purposes?

Financial reports on the main dash, as well as anything through stripe tax.
