This is expected, and your setup is correct. A Google Pay Wallet needs to be set up on your Google account for Google Pay button to be displayed.
Because in Incognito mode you are not logged in into your (or any) Google account, therefore you don't see the button.

It's not mentioned in Stripe docs, no. Maybe it's available somewhere in Google Pay docs.

I checked with my colleagues they are able to successfully pay and complete the booking, but when i try it is showing this error, so just trying to figure out if it is inconsistent what will happen when we move to prod
