I guess one additional point worth mentioning is that our Connected Account users go through the Connect flow in our Live environment

We understand that we can access each Connected Account's Live and Test accounts after a single Live Connect flow.

Does this have to do with why we're seeing Test events in our Live Connect Webhook endpoint?

Yes this is normal for Live standard accounts that you've also connected to in testmode (so that you can run test requests using them)
