Quick question, are you using Standard, Express, or Custom connect accounts?
For #2, the answer is yes. You will likely want to use our separate charges and transfers flow here. There isn't an explicit fee here but you keep whatever funds you don't send off to the other account. So you can save how much off a fee to charge and make sure to take that out of what you send to the seller https://stripe.com/docs/connect/charges-transfers
The answer is still yes otherwise, for direct and destination charges you can change the application fee per payment as well

About Standard/Express/Custom : We tried using the recommended Express but India as a country was not an option there, so we choose Standard. (We are still not clear on which to use here TBH).

Gotcha. So the Standard account is why it is asking for real data in test mode. Standard accounts can be used as live accounts and there isn't a separation of test data like that, so they do require real data to be used in test mode.
I will double check on whether Express accounts are supported in India. If not, that may mean that Standard is the right choice any which way
You can implement the flow that you want using either.

I'm not sure how close we are to supporting them, if you reach out to our support team they may have a better idea though I am guessing they won't either at the moment.
Standard accounts should be able to achieve the fund flow you want here (charging up front and sending money to the seller once they have delivered). Express would basically give you a bit more control over their account and offer the seller a simpler dashboard, so they might make more sense for your flow but it might not be worth the wait depending on when you want to launch.
