Did you try using it and run into problems? If so, the specifics of that may give us more insight.

To answer the first part of your post as well. No, you cannot add custom input fields to Stripe's hosted Checkout Sessions. If you want to customize the checkout experience for your customers then you will need to build that, and if so leveraging our Payment Element is the best way to integrate Stripe into your custom checkout experience.
