The reason we pay out in lump sums is because individual transactions are small amounts and would cost our connected amounts more in Instant Pay fees, but the per-transaction information is valuable nonetheless

Adding itemized breakdown as metadata in payout is not supported.

Another option is to add custom description (not itemized) on charges and transfers: https://stripe.com/docs/connect/customize-express-dashboard#set-custom-descriptions

Do you have any examples for what a custom description looks like in the Express Dashboard?

Instead of showing Payment on {YOUR_PLATFORM}, it will be the description you set in the API. For example, When description: My custom description, the Express dashboard will show My custom description
