yup, that's what i was reading and there was no mention of doing it via the dashboard, so i just thought to still ask in case i missed anything

You can do that via Dashboard as well, remember to turn Prorate off.

is there a way to do that without the customer having a payment method on file?

the case is pretty much this:
we've got existing subscriptions that have been paid for (not through stripe), and now would like to start migrating those subscriptions to stripe. We don't have card info on file as the payments so far mostly have been made through bank transfers n stuff
