Our own owner company of the Stripe account is in the EU though, so our own balance is EUR atm

Yeah, I have found that page. However I don't understand if we need to enable another account to start collecting another currency
As everything is in EUR so far
Can we just accept a USD payment and we will automatically have a USD balance?

https://dashboard.stripe.com/connect/accounts/acct_1Lq9PRFmNoFNMyGA/settings you can also add external account for the connected account to receive payouts in a different currency.

Okay, so we can just add a different currency balance in Payout settings and allow users to add GBP external accounts, then all works out?
Also if they withdraw, then are they charged the same pricing in their payout currency?
