No unfortunately this isn't currently supported via Stripe Checkout. What you could do is use Stripe Checkout in setup mode to collect a payment method and then schedule a Sub to be created.

would checkout itself be able to create the scheduled subscription? or whould i do this on my end through webhooks

You would do this on your end after the Session is completed (yes using Webhooks)
