Hm it sounds like Invoicing might be a better fit: https://stripe.com/invoicing. You'd be able to pass a different amount for each invoice you create

Ah ok, i defaulted to Payment Links as we already use them for a standard payment, a fixed amount that can be used by anyone but it does sound like Invoicing will be a better fit for this requirement, thank you for your suggestion, i will test it this afternoon.
