There'd be an email history log on the actual invoice page
So here's the events from the invoice. I don't see any email ones....
Am I missing something?

There's no specific event for an invoice being emailed (it's a part of invoice.finalized)
At the top of the page it'll detail if/where it was emailed
i.e. the Billed To: xxxx@xxx.com at the top?
Can you share the Invoice ID? in_xxx
So my customer says they haven't received it - is there anything I can do to help them?

Ok, so that setting only applies to manual (send_invoice) invoices. The invoice you've shared is part of a charge_automatically subscription
