But i don't want him to be charged right away for it but trigger it at a later date if some condition are met within my env
When will be this later date ? in hours ? days ?

It's not a specific date, it's actually related to a usage within our env for a "trial" with no real period. The user after going through that usage limit will then go into the normal flow and be charged of the fix priced of the product within stripe

thus my doubt about the doability of this within stripe for a fixed price product

I guess your first assumption was on point, if you don't really know when the trial will end, you can extend the trial period for a long time, and then change that once its no longer a trial period in your logic
