The pricing table feature is for creating new subscription, not updating existing ones.
If you want the users to be able to update their subscriptions, then you need to use the customer portal or build something custom on your end.

Yeah, I thought that might be the case, thank you so far. If I do build something custom, does it matter if I save product tiers as plans or separate products, will they show differently in invoices?

On the product pages in the stripe dashboard, I set up multiple prices for each product to represent the product tiers, instead of the usual way of adding another product for each one. I thought this was reasonable, but I'm not sure if a customer's can buy multiple subscriptions for the same product at different prices. Or there might be other problems like product tiers not showing correctly on invoices, as they are the same product as far as stripe sees it.
