Hello! As far as I know there's no way to access Guest Customers from the API. You can set customer_creation to always on a Payment Link to make that Payment Link always create a Customer though: https://stripe.com/docs/api/payment_links/payment_links/create#create_payment_link-customer_creation

Is that option available for Payment Links generated from the Dashboard? We were testing things using that method and couldn't see how to do the same thing there.

I don't think you can set that option in the Dashboard, no.
