AFAIK there is no limit

#

Maybe you could get an API rate limit by day, not sure, but at the end you can create as much as product/prices/customer/coupons as you need

Thanks. Do products expire if it's inactive for a long time or they will be there permanently until being deleted?

There is no expiration date on the product, but you can manually deactivate a product:
https://stripe.com/docs/api/products/object#product_object-active
