Actually I just tested this on my end, and it worked! So yes capture_method:"manual" works with Apple Pay.

Can you maybe also send me how do you try it out? I wanted to try with a cli to create a payment intent with capture set to manual, but i cannot provide apple pay as the payment method (or i dont know how to?)
