It's not possible to adjust the price if the price of a product is in used, but you can create a new price on the product

Can that price only be applied to a specific customer, and not adjust the price for any others?

Ah, unfortunately those prices are wired into our app logic. We were hoping to just adjust the price in the Stripe UI for a specific subscriber, a shame you can't do that.

This will not be possible. You can only update to new price ID on the intended customer
