Good question, it looks like we don't have an argument for using an arbitrary version, but our docs do mention that it is possible to use the latest API version. Still looking for what configuration to set there

Using the latest will work. Unfortunately, the default API in test is tied to the API in production and we still have some old code so we cannot change the default yet.

With your clue about "latest" I was able to find the setting. Just add "--latest" to the listen command.
