How do I start this process and can I use a combination of the two products?
we have lots of docs for this but it depends on many factors. You have a lot of high level decisions to make, like which type of connected accounts and funds flows are you going for: https://stripe.com/docs/connect/accounts

Ah I missed key piece of info, all payments go to the platform host, (us)
Okay but then why do you think you need Connect?
Maybe connect isn't the right product then, if all payments are going to us. I just saw connect as being labelled as "platform". Now it makes snese that this wouldn't fit the use case.
What would the product be then?

If people are simply paying you, the business, then you would not use Connect
And you use Billing if you charge recurring payments.
Yes so going by the use case I said before, onboarding fee (that's held), pay per meeting occurrence and subscription, all payments going to us what would the right product be?
Billing for recurring payments, and normal payments for one-time payments (no specific product name)
