am i able to build this integration myself, looks like you provide the relevant billing tools to manage subscriptions prices etc?

or does the payments / reconciliation only work if i use stripe payments (eg i can't update a subscription to have been paid etc)

You can mark Invoices specifically as paid out of band, which means they were paid elsewhere. But you would have to do a ton of extra development in order to sync Stripe with another payment processor in that way
