I've set the tax code of the product
and I've set the exclusive tax in the price
but when I create a checkout session for that price
the automatically calculated tax is shown as 0 in test mode

there's various reasons the amount can be 0, see https://stripe.com/docs/tax/zero-tax for lots of detail on that.
Beyond that, do you have some details I can look at like the cs_test_xx ID of the CheckoutSession?

the specific reason I see in our tools is that you're not registered for tax in the customer's jurisdiction(San Francisco) (https://stripe.com/docs/tax/zero-tax#not-registered)
