Stripe has no limit to the coupons you can create
The same rate limits apply (100 rps for POST, 25 rps for GET)

Once a coupon code is created, is it possible to track if it has been used, which customer has used it and what is its expiry?
Also, does stripe allow you to delete coupon codes?

Stripe does track coupon usage that you can see in the Dashboard

You can test this out to ensure it behaves as you expect.
