Those should both work as ways to send funds to your users. If both the seller and organization are connected accounts to you, separate charges and transfers will be the way to do that split. Also yes, using SourceTransaction will ensure that Stripe waits for a payment's funds to land to send them to each account which can prevent the need for a bugger.

Unfortunately we aren't as familiar with KYC on this server. I don't see why any of those things would affect KYC but don't know for sure. If you reach out to our support team they may be able to help you more here https://support.stripe.com/?contact=true
