Hi there!
If you are placing a hold on a card for 5€, then you can capture maximum 5€, not more.

However you could save the payment method for future use, and try to charge an extra 2€ later.

I thought so. Is it maybe possible to linke the extra 2 € charge to the first 5 € charge? Or is it alway two separate charges?

No it will be two charges in that case.
Otherwise place a hold for 7€ directly. This way you can capture 7€ if needed, or less.
