I'm using a Mac Pro, so I can't download the Google Pay wallet app from the App Store, in which case I can't use Google Pay in Chrome browser?

You need to add a card to your Google Wallet in order to see the Google Pay button request:

After setting that, when accessing to this page, you should see the Google Pay button and not Either your browser does not support the Payment Request API, or you do not have a saved payment method
