Yes, you can test Apple Pay, if your simulator doesn't show already Apple Pay request button, you can add one of these test cards

Sorry for my late reply, you'll need to add areal card to your wallet:
https://support.stripe.com/questions/testing-apple-pay-with-stripe#:~:text=You will need to enter a real credit card number to your Apple Pay wallet%2C as the wallet does not allow Stripe's test cards. However%2C if you are in test mode and using your test API keys%2C Stripe will tokenize the real card to the fake test card and you can move forward using that for testing.
