Yes, this is possible
You can upgrade/downgrade the subscription with the doc here: https://stripe.com/docs/billing/subscriptions/upgrade-downgrade
Hmmmm okay but it want to be able to add a new product to the subscription, and the subscription gets updated as the docs BUT i want to be able to remove that product i added to the subscription in the customer panel
Which customer panel are you referring to?
The Portal
Stripe customer portal
We want it to be like this: We have 3 products you can subscribe to, we want the customer to only have 1 subscription
And you should be able to manage the subscription in the customer portal
So like: Today you start a subscription for 1 product, then in 2 weeks you want to have access to the other product too, so you add it to your active subscription
Then you should be able to manage it
