We're looking into if we could sell one time purchase items through the prebuilt checkout (with Stripe tax)

Had a look at this while back, don't remember why we didn't found it to be working then but if I remember correctly it was not generating an invoice or equivalent entity that included tax details. It was just a payment intent if I remember correctly?

correct. To be clear, Checkout, does support tax calculation just fine(https://stripe.com/docs/tax/checkout/) , but it doesn't generate Invoices for one-off payments

the Orders beta is closed right now(https://stripe.com/docs/orders) so I wouldn't really consider that in your plans

there are some plans/active work to have Checkout generate invoices yes, but no timelines I can share
