there're two options here :
- you can create another authorization on the 7th day, then cancel the old one (continue to do this until you're ready to charge)
- save the payment method, charge a deposit, or only charge the card x days before the service is provided
1st option will not confuse the client?
2nd option, what if the card has no funds anymore*?
there're always pros and cons to each option here. for the 2nd option, then you could inform the customer to update their card, and if you still can't charge it or the customer did not provide a new card, then you would cancel the order
Also, I was reading about Stripe Issuing, it fit my use case? I couldn't fully understand it

Sure, the worker will ask for extra days (to delivery the service) and if the buyer accepts we can create a new auth
in that way I think the customer will not be confused by many requests
my platform will be pretty similar to fiverr
i'm not familiar with how fiverr works, but it sounds reasonable to me
