So, I am setting up a subscription and then confirming the setup / payment intent. However, the customer can freely change the product / price before paying. I have tried updating the previously incomplete subscription but i don't think the the two products are compatible. Would I be right deleting a subscription and recreating it every time the customer chooses a new product / price id?

Yeah you would have to create a new sub object if you want to give them the ability to change the product/price that late in the flow
