From Stripe's point of view the statement descriptor should be CARRIE CO LTD. But ultimately it's completely up to the bank to display what they want.

Some of the card networks (Visa, Mastercard) request additional merchant information along with the statement descriptor (can be URL, address, phone number)

There are banks that will surface that information in their statement descriptors and unfortunately there's nothing that can be done about that
