That should be doable with Connect. Are you facilitating payments as the platform? Or are each of the locations handling their own payments, then just sending the platform money?
We are facilitating payments. Restaurants receive orders which are processed through to Stripe. We take a % cut of the earnings and the rest gets paid out to each restaurant location. How do we set it up in Connect to take another % cut of the payments and send that to the HQ account?
Connect and its fund flows are a fairly complex process, how familiar are you with them? ("none" is an ok answer, just need to know where to start, there's lots to read)

We are also only trying to do this for a small subset of our restaurant customers, not all of them because there are many customers and only some locations affiliated with the parent HQ location
