And follow up question:

Are we able to start someone on a subscription with a 100% off coupon where they do not have to provide a credit card, and then basically let the emailing (whether Stripe or ours) handle collecting payment info before the next renewal so that their subscription is not interrupted by our overdue expiry settings?

Ideally if someone is to start on 100% off (not a trial, want to avoid trials) they do not need to provide payment info to start
