it basically replaces the existing method with a mocked one you assert things on. It currently is working with useApplePay in the same fashion

Alright yeah I'm not seeing the issue and probably not familiar with Jest enough to really assist here. I think your best bet in this case is to post an issue here: https://github.com/stripe/stripe-react-native/issues
