My problem is that I need to start generating Stripe Cards and per documentation that is only available for custom accounts.

So, how will I generate cards for existing ?
There isn't a way ?

not publicly but as far as I know there's a beta for it, we just haven't released it publicly yet.

if you're working with a sales contact at Stripe I'd suggest asking them to help you get access and be able to use Issuing on your Express accounts.

moving to Custom is a huge amount of work that you really shouldn't do or need to do.
