because you said it was "hotel"-like business I defaulted to one of our most use-cases with hotels which is not charging the customer directly

yes since you are creating the transfers separately you can do it whenever you want

one thing to note is that you need to have the money/funds to be available in your balance to be able to do the transfer

if you're doing the transfer separately you could choose what amount to transfer

which means you will have to calculate the transfer amount based on collected money - stripe fees(if you want the Connect account to take them in charge) -commission
